I made a batch of these and they were gone before I could try one! Who's the date monster, you may ask? None other than my husband who has been obsessed with our new Date Flight. Make these as a super simple no-bake dessert or a quick power snack. This recipe is completely refined sugar free which is just *amazing* for the gut!
10 Medjool Dates (or however many you want to make)
2 oz Dark Chocolate (we used 100% dark Ghirardelli)
Lightly salted pistachios
Make a slit across the length of your Medjool dates to remove the pits. Stuff each date with 3 whole pistachio kernels. Meanwhile, put your chocolate in a double boiler and slowly melt chocolate (I use a small pot with simmering water and a stainless steel mixing bowl on top). Dip each date into the chocolate, making sure to cover all sides and letting some of the chocolate seep inside the slit. Remove each date with a fork, shaking off excess chocolate. Place the choco-dipped dates on a non-stick baking mat or parchment paper. Sprinkle with crushed pistachios and allow to fully cool at room temperature! Sahtain!
