We're in our feels about how delicious this cauliflower is and we think you'll be too!!
Pumpkin is such a staple this time of year 🍂 so we decided to elevate the sweet flavors and add a kick of spiced to round out the dish!
Plate this as an appetizer or simply enjoy it as a meal!
Ingredients:
-1 Head of Cauliflower
-1/2 Red Onion
-Halawy Dates (From our Date Flight)
-Rosemary (OR whatever herbs you have on hand)
-Pumpkin seeds for topping
-Tahini
-Olive Oil
-Salt & Pepper
For Pumpkin Puree:
-1 14.5 oz can pumpkin Puree
-1/2 Tsp Chili Flakes
-1/2 Tsp Cumin
-1/2 Tsp Smoked Paprika
-1/2 Tsp Garlic Powder
-Salt & Pepper to taste
Process:
1. Cut the cauliflower like "steaks". Drizzle your chopped cauliflower, red onion, and dates with olive oil. Add your rosemary and salt and pepper. Make sure you coat the cauliflower well.
2. Bake in the oven at 400 F for 30 minutes, flipping the cauliflower steaks halfway through.
3. Add your pumpkin puree, and seasoning to a food processor and blend. Add to a small sauce pan and heat on low until warm.
4. Let's plate! Spread the pumpkin puree on your plate and add your cauliflower steaks on top. Add the roasted onion and dates and drizzle on the tahini. Sprinkle with the pumpkin seeds and enjoy!
